The Pungent Aroma of Phu Quoc Fish Sauce
Upon arriving at the Phu Quoc Fish Sauce Factory, I was initially struck by the overwhelming smell of the fermenting fish sauce. However, as I toured the factory and learned about the traditional method of production, I gained an appreciation for the pungent aroma that is essential to this beloved condiment. The tour guide explained that the factory uses only fresh anchovies caught in the waters surrounding the island, and that the sauce is aged for at least a year in wooden barrels. In addition to learning about the production process, visitors can taste test different varieties of fish sauce and purchase bottles to bring home. Overall, my visit to the Phu Quoc Fish Sauce Factory was a unique and educational experience.
